Abstract:

2016 has been declared by the United Nations as the Internal Year of Pulses. This is raising a lot of interest about pulses and how they can be used in foods.  This presentation will provide information on the health and nutritional properties of pulses, specifically the digestibility of pulse protein, as well as some of the emerging and novel approaches for the development of new ingredients and food products from pulses.
